With nearly thirty years of experience in the caviar industry, we have developed exceptional expertise across the entire production and distribution chain of sturgeon roe. This journey has given us a front-row seat to the industry’s evolution, allowing us to refine both our vision and our mission.
When CITES imposed a ban on the export of wild sturgeon in 2008, the caviar industry was forced to reinvent itself, turning to aquaculture to sustain a rapidly changing market. Some forward-thinking farmers seized this opportunity to reintroduce sturgeon into their natural environment’s: flowing waters, using optimal native genetics to produce a product as exquisite as wild caviar.
Our deep market knowledge, combined with our expertise in sourcing and crafting premium products, naturally led us to collaborate exclusively with these farmers. They share our values and our ambitions.
Living Water Certified was born from this shared commitment: to offer Grand Cru caviar produced with the highest standards. Driven by this ideal, we are determined to break away from traditional models of sturgeon farming, without compromise, by maintaining strict selection criteria for our fish, ensuring optimal living conditions and nutrition at every selected site.
